Stage Two Weaning Recipes

Mediterranean-Vegetable-296x300Mediterranean Vegetable Puree

Suitable from 6 months, makes 5 portions, suitable for freezing

Ingredients

  • 100g red onion, peeled and chopped
  • 150g courgette, diced
  • 100g yellow pepper, deseeded and diced
  • 175g aubergine, diced
  • 1 clove garlic, crushed
  • 400g can chopped tomatoes
  • 200ml unsalted vegetable stock
  • 1 tbsp tomato puree
  • 1 tbsp chopped fresh basil
  • 30g cheddar cheese, grated

Method

  1. Put all of the ingredients except the basil and cheese into a saucepan.
  2. Cover with a lid, bring up to the boil, then simmer for 15 minutes until all the vegetables are soft.
  3. Add the basil then blend everything until smooth. Stir in the cheese until it is all melted.

 


Chicken-Butternut-Squash-and-Sage-225x300Chicken, Butternut Squash and Sage

Suitable from 6 months, makes 4 portions, suitable for freezing

Ingredients

  • 350g / 12oz butternut squash, peeled and diced
  • 50g / 2oz cooked chicken, diced
  • 50g / 2oz Cheddar, grated
  • ½ tsp fresh sage, chopped

Method

  1. Steam the squash for about 10 minutes until tender. Drain and mash with a masher.
  2. Add the chicken, sage and cheese and mash together. For younger babies blend the cooked squash with the chicken and then stir in the grated Cheddar and sage until the cheese has melted.

 


Salmon-Cod-and-Spinach-234x300Salmon, Cod and Spinach Puree

Suitable from 6 months, makes 4 portions, suitable for freezing

Ingredients

  • A knob of butter
  • 2 leeks, chopped
  • 200g sweet potato, peeled and diced
  • 350g mixed salmon and cod cubed
  • 200 ml water
  • 75g baby spinach
  • 100 ml full fat milk
  • 50g mature Cheddar cheese, grated

Method

  1. Melt the butter in a saucepan. Add the leeks and sweet potato and fry for 2 to 3 minutes.
  2. Add the salmon and cod and the water. Bring up to the boil, cover and simmer gently for about 15 minutes until the vegetables are soft and the fish is cooked.
  3. Add the spinach and stir to wilt. Add the milk and cheese, then blend using a hand blender and puree or roughly chop for older babies.

Suitable from 6 months, makes 5 portions, suitable for freezing

Ingredients

  • 1 tsp oil
  • 75g onion, chopped
  • 30g red pepper, diced
  • 100g courgette, diced
  • 100g carrot, diced
  • 75g sweet potato, diced
  • 100g lean minced beef
  • 400g chopped tomatoes
  • ½ tsp ground cumin
  • 3 tbsp apple juice
  • 100ml water

Method

  1. Heat the oil in a saucepan.
  2. Add the vegetables and fry for 3 minutes.
  3. Add the beef and brown with the vegetables.
  4. Sprinkle in the cumin, then blend in the tomatoes, water and apple juice.
  5. Bring up to the boil, cover and simmer for 30 minutes until tender. Blend until smooth.
